Olive oil 1 tbsp
125ml (1/2 cup) milk
mixed salad leaves to servc
Preheat oven to 180C.
Oil a oven proof pan.
Heat oil in a large non-stick frying pan over medium heat.
Stir fry vegetables for 3 minutes or until soft. Transfer to prepared oven proof pan.
Whisk eggs & milk in a bowl until combined. Season with salt & pepper. Pour over vegetables.
Bake for 25-30 mins or until set & golden.
Set aside for 10 mins to cool slightly. Serve with salad leaves. (I usually have toast on the side as well)
